Japanese Oak
A broadleaf tree of the genus Quercus in the beech family (Fagaceae), including Mizunara and Konara oak. It is ring-porous, with a distinct grain. The heartwood is grayish-brown, and figure (rays) appears on quarter-sawn surfaces. The wood is heavy and hard, with excellent durability and water resistance; it expands and contracts little and resists warping, making it suitable for furniture, whisky barrels, and flooring. It grows in Japan as well as in Russia, China, and elsewhere, and the timber produced in Hokkaido is collectively called Hokkaido Oak.
Japanese Cherry
A broadleaf tree of the genus Prunus in the rose family (Rosaceae), distributed from central-northern Honshu to Hokkaido, the Kuril Islands, Sakhalin, and northeastern China. The name refers to species such as Yamazakura and Shiuri cherry. The heartwood is reddish-brown and the sapwood pale yellowish-brown to yellowish-white, with a clear boundary between them. It has moderate hardness and strength, with a fine, even texture that takes on a luster when polished. Excellent in quality, color, and workability, it is used for a wide range of purposes, including high-grade furniture, joinery, musical instruments, and carving.
Japanese Chestnut
A deciduous tree of the genus Castanea in the beech family (Fagaceae). It is distributed from southern Hokkaido through Honshu, Shikoku, and Kyushu to the southern Korean Peninsula. The heartwood is brown and the sapwood a slightly brownish grayish-white, with both the boundary and the growth rings clearly defined. It is ring-porous, with a slightly coarse texture and a bold, powerful grain. The wood is heavy and hard, with excellent durability and water resistance, and is regarded as among the finest of Japan's domestic timbers. With a history of use as a building material since the Jomon period, it serves a wide range of purposes, including foundations, bridges, railway sleepers, and furniture.
We have already established a sourcing system that makes the origin and background of each timber clear, together with a barrel-production system that applies the precise processing technology cultivated in furniture-making, for a diverse range of wood species: the eight species of Japanese Ash, Japanese Elm, Japanese Sen, Japanese Birch, Japanese Amur Cork Tree, Japanese Maple, Japanese Linden, and Japanese Walnut—a world first for aging barrels of Western liquor, to our knowledge—plus Japanese Acacia. We will roll out these new species in stages, after evaluating aspects such as technique and flavor through joint research with the Hokkaido Research Organization (Forest Products Research Institute and Food Processing Research Center).
